Pain Brut is an artisan organic bakery in the heart of Montpellier, founded by three childhood friends who share a passion for French baking and pastry. Each trained from the age of 16 in a different specialty, and together they took over a beloved institution near Place de la Comédie — keeping its spirit alive while making it their own. Their philosophy is simple: quality and authenticity over quantity. Everything is made in-house daily, with local and regional ingredients and a clear preference for good products done right.

The bakery specializes in organic sourdough breads made with long fermentation, a traditional method that gives rich flavor and perfect texture. The range includes the semi-wholewheat country loaf "Le Brut," a walnut version, a generous Kalamata olive bread, a rye roll with a hint of miso, the traditional "La Petite Brute" baguette, and even gluten-free options for those with dietary restrictions. Alongside the bread you'll find high-quality homemade viennoiseries, reinvented French pastries, and vegan treats — all baked fresh.

There's more than bread to enjoy, too. Open Tuesday to Saturday (closed Mondays), the bakery lets you eat in and tuck into gourmet sandwiches, fresh organic salads, and homemade quiches, with a selection of drinks to go with your meal. A tea room and café space invites you to relax over a homemade pastry and a quality coffee — perfect for a quiet breakfast or a sweet break any time of day.
