Le Chai du Clapas is something genuinely rare: an urban winery in the very heart of Montpellier. A "chai" is where wine is made, raised, and tasted before it ever reaches your glass — and here, everything happens on site, right in the city centre, fermentation tanks and all. Winemaker Thierry tends his own vines at Le Pouget and brings the harvest into Montpellier to vinify it himself, crafting wines in his own image. As they like to put it, "y a pas plus court" — you can't get a shorter journey from vine to glass.

The wines come straight from the tap, to enjoy on the spot or to take away in your own container, bought in bulk. There are three house cuvées, each with its own personality. The white (Terret and Rolle) is bright and fresh, with notes of poached pear and jasmine and a frank, taut profile — perfect with oysters or tapas. The rosé (100% Syrah) shows pretty redcurrant and strawberry-soup nuances; vinous, food-friendly, and thirst-quenching, it's ideal for an apéro or light dishes. The red (Syrah with a touch of Merlot) is all cheerful grenadine, raspberry, and black pepper, round and textured on the palate, and made for a charcuterie board.

To go alongside, there are sharing boards — mixed (charcuterie, tapenade, and cheese), a veggie version (pickles, olives, tapenade, and cheese), or all-charcuterie — plus individual plates of cheese (goat, sheep, or cow's milk), tapenade, olives, and pickles. And on Thursdays and Fridays, fresh Bouzigues oysters make an appearance. Beyond the house wines, there's Alaryk blonde beer on tap, original wine-based cocktails and apéritifs (a classic Kir or Communard, a gingery red, violet and rose rosés, or the refreshing "ginger wine" and Suzette), and a proudly local lineup of soft drinks: fruit juices from Verger de Thau in Villeveyrac and sodas from Maison Aubert in Pézenas — apple, peach-apricot, and grape juices, plus lemonade, cola, sparkling green tea, citrus rooibos, tonic, and ginger ale.

Equal parts working winery, wine bar, and showcase for local producers, Le Chai du Clapas is a one-of-a-kind spot to taste honest, homemade wine — straight from the tank — in the middle of Montpellier.
